Kishek Ingredients: Dried Yoghurt, Burghol and Salt. Kishek is known for its high nutritional value. A wonderful morning hot cereal is made with it. Saute a chopped small onion in 3 Tbs. olive oil (or qawarma if you have it), until yellow. Add 6 - 8 whole cloves of garlic and saute a few minutes. Add 1 cup dry kishek and stir until kishek absorbs oil and is a little toasted. Add enough very hot water, stirring constantly, until it resembles soup. Stir over medium heat until it thickens a little (about 7 minutes). Enjoy with bread, radishes and sweet onions.
Falafel Empty the contents of one or two envelopes into a bowl. Gradually add two thirds (2/3)of a cup or 125ml of water for each envelope and mix well. Let mixture stand for about one hour. Use round soup spoon to form the falafel paste into individual flattened balls. Deep fry in hot oil until golden brown. Drain, and serve hot. Each envelope makes around 10 balls.
